FARM to FREEZER | BUTCHER SHOP TOUR! You Won't Believe This Setup!
What happens here
The processing floor is set up to handle one farm's animals at a time. Long tables are arranged with multiple stations for meat cutters. Carcasses are brought to these tables, and butchers work from a detailed cut sheet provided by the farmer. They utilize industrial band saws (Biro brand) and specialized knives to precisely break down the animal into primal cuts and then into smaller, specific cuts (e.g., steaks, roasts, stew meat, stir-fry). This meticulous process maximizes the yield and ensures that each cut meets the farmer's specifications. The entire table is cleared before processing meat from another farm to prevent any mixing.
Goal: Process animals into specific cuts according to farmer's instructions.
