the stoney ridge farm and i've got the key ingredient right here in my hand so today we're gonna make bacon cheese burger squash sliders if you've never had these before this is a recipe that i kind of came up with on my own it's super awesome it's a carb snack and or meal for your family it's refreshing a great little summertime meal so come along as we make bacon cheeseburger squash sliders all right folks today's video is brought to you in part by stargazer cast iron if you haven't heard of stargazer cast iron check them out i'll post a link down the video description there if i can get a coupon code i'll also post a coupon code this is stargazer cast iron if you post a comment in here you'll be entered to win this skillet right here awesome everything we'll be cooking today will be on stargazer cast iron it's what i use here in the farm kitchen awesome let's get busy all right folks this couldn't be a simpler meal to prepare it's super super easy so the first thing we're gonna need is to get our bacon started what we'll do here is we'll lay our bacon out and i'm gonna take a pair of kitchen shears the bacon's been in the freezer for just a little bit and i'm gonna cut it into thirds we won't need all this bacon so we'll take the center cut right here and we'll go ahead and put this in the pan and get it sizzling so we've got our stargazer cast iron right here all i'm gonna do is just take my bacon just kind of spread it out in the pan a little bit we want this to cook down and the grease the bacon grease is what we're going to use to cook our squash and also to cook our beef i also like to put black pepper on my bacon put that in there and go ahead and get it cooking on a medium to low heat so we'll have cheese this is sharp cheddar cheese and this is all organic ground beef right here it's not right off the farm but pretty soon we'll have our own beef right here off the farm and the seasonings we're going to use is just black pepper we'll be using a little bit of onion powder right here we'll be using a little bit of lowery seasoned salt and a little bit of salt just plain old iodized salt we're going to go ahead get our knife out we're going to start cutting our squash up so we want to cut the ends off we'll cut the end off right here we'll rotate her around cut the end off right here this will go to the chickens and we'll start cutting our squash and we want to cut it about a half inch to three quarters of an inch thick okay this is a little bit larger piece of squash than we would typically want to cook because the seeds will kind of get a little hard and that's why we save these for slider so i've got a couple pieces of squash here we'll have some squash to nibble on those are your little appetizer niblets right there and all i do is season these with salt and pepper just a little bit of salt a little bit of pepper and the squash here is going to be a substitute for a bun so we won't need a bun we don't need a hamburger bun this is going to be our bun and it's going to be on the bottom one thing to remember is your squash is going to cook the fastest so we want to go ahead and stack our squash up on this plate right here and have it ready we're going to go ahead and make our sliders and the way i make my slider burgers is i just take a little pinch about half the size of what a normal burger would be typically i'd probably get three or four burgers out of this one pound right here we'll probably get six sliders out of this it ain't rocket science just take a little pinch i like to make them about a half inch thick just about as thick as the squash right here so that's what she's gonna look like now that i've got my sliders all made up i'm going to take a little bit of onion powder now you won't taste the onion but i like the onion powder it kind of gives it a little fresh taste so we'll sprinkle a little bit of onion powder on there then we'll take our lowry's season salt and gently sprinkle a little bit of lowers if you guys don't use lowry seasoned saute it's super super awesome then i'll take my black pepper and i'll just sprinkle a little black pepper i think we're actually going to take these to the next level and we're going to put a little bit of parsley on there so our bacon's almost done here we're going to take a towel put it in a bowl you don't have to do all this but we're going to absorb some of that grease from the bacon open her up towards the rear here and we'll start scooping out some of this bacon you can cook your bacon however you desire i like mine not so crunchy i like it to be a little bit soft for this so we're going to get our second stargazer cast iron pan over here these are really really nice guys look at how how good of a surface that is right there these are cured out really really easy they come pre-cured from the factory and it's better than that stuff that you get at the big box store i will tell you that it's really really awesome stuff so we're going to go ahead i have a coffee cup here that i pour my extra grease in still leave a little bit in there just enough to coat the pan surface and we're going to go ahead and we're going to put our burgers in here and our squash in here you want to get this pan just a little bit warm before you put your squash in there we'll put all of our burgers on at the same time here remember they're going to shrink up just a little bit and we'll get our squash on here now what you want to do with your squash is you want to brown it you just want to brown it on one side flip it brown it on the other side and get ready to put your burger meat on there you see our little slider burgers have just about cooked look at that oh that's a perfect little cast iron sear right there caramelized oh that's delicious anybody's mouth watering but mine look at that awesome sear on that stargazer cast iron we gotta check our squash here make sure we're golden brown oh that's perfect right there too oh yeah we want to cook the squash all the way through but we don't want it to be mushy see how it gets that good golden sear on there we're just gonna slide literally slide our little sliders right over on top of our squash we're gonna reach up here we're going to turn off the squash i like to do two slices of bacon per slider and we'll take some sharp cheddar cheese we'll break it in half and lay it right over top of each slider bacon cheeseburger squash sliders add a little color to it we're going to sprinkle just a little parsley on the top it's important for food to be pretty as well as delicious remember this is off we're going to put the cover over it let that cheese melt we're ready to come off guys and we're going to do the taste test remember you're making squash not squish so don't make it all squishy put it in there on a high to medium high heat brown one side flip it and start putting your burgers on don't forget make enough bacon let's have some snacks while you're cooking oh yummy oh yes here are two of our delicious bacon cheeseburger squash sliders now they're a little bit hot right now but what the cheese does is actually kind of holds the bacon to the top of the piece of meat right here which is super cool and it holds as it melts down and holds the meat to the squash so without further ado let's bite into it i'm excited nice this is an awesome little treat if your kids don't like squash this is a way to get them to eat it i hope it's not too hot absolutely delicious be sure you don't over salt because your bacon is going to have a little bit of salt flavor too totally worth a try guys awesome awesome awesome well folks a very simple recipe all it takes is two big old squashes maybe three uh you can buy them at the grocery store if you got them growing in your garden go out there and pick those big squash that you don't use and that might make it to chicken feed and turn them into your feed so instead of using a bun we're using squash we're eating healthy we're eating low carb and i've lost 55 pounds doing this man so thanks a lot for watching guys i hope you enjoyed this video two or three squash pound of hamburger a little bit of seasoned salt a little bit of onion powder salt and pepper and you're done 15 minutes later get your kids in the kitchen teach them something thanks a lot guys please found that like button jump in
