What happens here
Carefully trim any 'silver skin' (a tough, silvery membrane) from the brisket using a sharp filleting knife, as this won't render during cooking and can prevent rub adhesion. On the fat cap side, identify and remove any large, hard pieces of fat that are excessively thick. The goal is to trim the fat cap down to an even layer of approximately 1/4 inch thickness. This hard fat does not render well and can be chewy. Discard the trimmed fat and silver skin. Ensure all surfaces of the meat are accessible for seasoning.
Goal: Prepare the brisket for optimal cooking and rub adhesion by trimming excess fat and silver skin.
