Traeger Brisket of Champions! Awesome 24 Hour Mouth Watering Cook!
What happens here
With the brisket wrapped in foil and the temperature probe re-inserted, place it back on the Traeger pellet grill, fat-side up. Increase the grill temperature setting to 225 degrees Fahrenheit (the video shows adjusting from 200°F to 225°F on the Traeger app). Continue cooking the wrapped brisket until its internal temperature reaches 190 degrees Fahrenheit (the host initially states 290°F, then corrects to 190°F). This final cooking stage will further tenderize the brisket as it braises in its own juices and the added spray mix. The video notes this phase should take approximately 6 more hours, bringing the total cook time to about 24-25 hours.
Goal: Complete the brisket cook, reaching optimal internal temperature for tenderness.
