What happens here

After trimming, apply the dry rub to all surfaces of the brisket. Begin by liberally coating the brisket with McCormick Grill Mates Montreal Steak Seasoning, patting it firmly into the meat. Flip the brisket and repeat on the other side. Next, apply Kinder's Butcher's All Purpose Seasoning generously, ensuring full coverage. Follow with Kinder's Master Salt (Garlic Sea Salt & Butter) and finally, a good amount of coarse ground black pepper. Rub all the seasonings into the brisket. Allow the seasoned brisket to sit at room temperature for 20 to 30 minutes, which will allow the salt to draw moisture from the meat and create a tacky surface for the rub to adhere better.

Goal: Flavor the brisket with a variety of seasonings to create a rich bark during smoking.
