hey folks it's josh tony rich farmer welcome to the farm blog today we're going to be in the kitchen today I haven't done any in the kitchen in the kitchen videos and quite some time and I thought I'd bring you in here in the kitchen I was gonna make this meal tonight anyway my wife really likes it come on along I'm gonna show you a very very simple meal for your family I think you guys would really enjoy it we're cooking venison tonight we're cooking venison tenderloin you can use beef you can use pork chops you can use chicken all of it applies to what we're doing here my wife and I are trying to eat a little bit healthier this new year so I'm gonna teach you how to make a fried food with coconut oil which is a lot better for you so come on along with your deliciousness I bet you didn't even know you can make gravy with coconut oil watch I'll show you come on along we'll have a little bit of fun all right [Music] [Laughter] so first things first guys we're in my kitchen here so first things first guys we're in my kitchen here it's a small kitchen we live in a mobile home okay we paid $3,500 for our home and this is where we live or I'll Pan the camera around a little bit okay all these cabinets and stuff I installed myself the whole kitchen design was all inspired by me what I wanted to do and I'm leaving this piece of trim off right here as a modern art masterpiece if you look over there there's like a buffalo and a bear there's some cool country stuff okay so that's a little bit of a tour of the living room here all this tile work everything here I did it all myself kind of proud of it enjoy living here in the country in a thirty-five hundred dollar house and then we spent about mmm 15 grand on the $3,500 house but it's paid for our house is paid for come on let's cook something so folks I don't know if you eat wild game or not but I do and we harvest wild game here on the farm well this is a deer that was harvested here on the farm by the red beaver and if you guys haven't seen the red beaver videos I'll post a link right here he's just a goofy guy he comes out and hunts and helps me out on the farm but this is deer tenderloin and that's what we're gonna be using today so we'll take and clip our bag here get it all out on our plate here okay we'll take those bags and we rinse those bags and we throw them in the trash okay don't just throw them in the trash rinse them first so they don't stink your trash up so what you need to know here is these aren't very large pieces of meat okay they're about big as your palm you know three or four of them is one good person serving size we're cooking a whole bunch of it because I want to nibble on it all week and they're great for breakfast great for lunch whatever snacks so this meat has been ran through a machine that basically tenderizes the meat see how it's cut up in little cubes and some people call this cube steak you could call it cube steak but it's cube venison steak a lot of folks won't eat venison because they think venison has this deer taste to it that a gamy taste that they just don't like a lot of folks will turn their nose up to anything new we're gonna bread it and we're gonna fry it in coconut oil now I know a lot of you folks are thinking this guy is gonna teach me how to batter in fry well I am gonna teach you how to batter in Friday I'm going to teach you how to make it really good okay there are certain ingredients that you can add to the batter that you can buy from the store and basically that's what we're going to use we're going to use this house ultry fried chicken or and fried steak and there's also chicken batter that you can buy that's pretty similar to this and that's what we use most of the time but this kind of makes the gravy taste really good so we're gonna get two farm-fresh eggs that we got out this morning we'll crack those eggs scramble em up in a bowl and we'll save the egg shells and a spare bowl to use in our compost all right so we get these guys all scrambled up well add a little bit of milk to the mix just a splash of milk and we'll scramble that up in there too I'd do something a little different than most people do I put a little olive oil in here and then I'll scramble that olive oil in there we'll put this in the compost you're picking it up now so the next step is our coconut oil this is just organic it's great value it's Walmart brand coconut oil and we'll put it over here in our pan come on over here with me so here we've got a well-seasoned cast-iron skillet and we're basically just gonna scoop out probably four four or five good spoonfuls of organic coconut oil now we'll let this heat up in the pan here until it gets to where it splatters when you throw water on it so we'll just let it heat up let it melt until it gets that when you hit it with water I'll show you while that pans heating up we already have some delicious mixed vegetables going on over here and I don't know about you guys but I'm from the south and I don't like them to be atomic green I like them to be cooked I like them to be cooked down a little bit folks say that it takes some of the nutrition out of it but I think it makes some of it tastes come into it that's what's important to me nutrition and taste so we cook this probably for an hour so and I'll show you what it is this is what we cook for about an hour and this is just mixed vegetables but Stoney Ridge farmer what about the bread we've got some grands homestyle southern style biscuits and we're gonna put those in the oven now you can use any kind of biscuit you want but we like the grands southern style biscuits it's pretty simple just follow the directions you can use toast you can use French bread I think we did French bread last time you can use anything then basically the bread is just to put the gravy on top of you really don't need any bread because the gravy is so good you can eat it by the spoonful but we'll spread it over a little biscuit because miss kitschy good now I like to cook my biscuits on a pizza dish okay see those holes on the bottom it helps a bit gets to cook through and through cook a little bit better and they don't burn on the bottom and I also like to take a little dollop of butter and put on the top of each biscuit as I go around so that they have a nice wonderful buttery flavor just a little fun tip [Music] just a little dab of butter is just fine you don't have to bury them in butter so now we're just waiting on our coconut oil to preheat and our oven to preheat we can throw the biscuits in there and then we can start cooking okay so you want all this stuff to get done right around the same time you got a time at just right so the biscuits are hot so the gravy is hot so the meat is delicious let me show you how I make my breading mix for my meat and show you what I do so we're gonna take our house out remix well open it up basically it looks like this it comes in a little flour packet okay pour it in a pot okay moved in a nice big pot now here's the Stoney Ridge farmers secret let's put the secret ingredients in here I can already look at this until it's not gonna be enough so I'm gonna add a little bit of house autry chicken batter I like that stuff tastes good and right here is the secret ingredient guys put about three or four tablespoons of cornstarch in your mix okay and this corn starts it's just white powdery stuff I just pour it in there till I feel comfortable and you can't put too much see that simply let's just pour it all in there oh so much dust my next secret ingredient is ground black pepper so look at this it's just so plain it doesn't look good it doesn't look right it needs something to make it pop a little black pepper in there be liberal okay boom I'm gonna say that's probably two tablespoons of black pepper it's alright it'll taste great all right all right when it's preheated I'm gonna put these guys in here just put him on a middle shelf next thing you want to do is you want to set yourself up a nice workstation right here that you can work off of we don't need these anymore throw them in the sink so our first step is gonna be our meat our second step is gonna be our eggs and then our next step is going to be the breading okay and I'll stir this breading up a little bit here before we get started the two tools I like to use here for this job our tongs and a wooden spoon take my wooden spoon and I stir up my mix good what you want is all that pepper to be mixed in there nicely Stoney Ridge farmer how can you tell when your oil is ready to start putting food in there this you hear that little sizzle that means it's ready so the secret here with frying is to not have your oil temperature too low or too high if it's too low the food comes out soggy if it - hi it burns too quick or it pops and makes a huge mess so we've got it just at the right temperature just as when you flick some water in it you want to test it a few times before you get to that point when you flick water in it it starts to pop and that's what you want so let me show you how to do the breading so my eggs are well scrambled I just take my meat and throw it over in the eggs okay I like to have one hand I call the wet hand and one hand I called the dry hand so the dry hand pretty much stays dry the whole time and that's the one I'll use to Pat the meat down when I'm reading it basically I want to take my brain and I want to scoop out a little spot lay my meat in and cover Pat it on there pop that in the eggs nice and good to where it gets good coverage lift bump that in the eggs throw it in cover it up such another handful throw it in cover it up so you get that full bowl full in there throw it in cover it up officially you'll start to run out of room you don't want to throw it on the bottom of the bear pan now that's it for the breading part now what you want to do is basically take this and just kind of Pat in with the back of your hand here just kind of Pat it in roll these guys around a little bit and Pat them in nicely okay then once there Pat it in nicely like that come over here to your pan and start gently laying them in yes like that all right so these are ready we're gonna start breading the next batch I don't need to show you the breading part again I'll just show you these cook and I'll tell you when we turn them just like how I told you we're trying to live a little bit healthier and then I'll show you how to fry something folks this is a point in the video where I asked you to click that like button if you're not subscribed to the channel subscribe check out some of the other videos here we have a vlog it's a farm vlog work on trucks who work in the kitchen we work on the farm I'll show you how we're taking a 200-acre bear farm and growing it into something that makes a living and take you along the way here and show you a few other different little tips and tricks there's a lot to learn from a lot of people out there now hopefully you can learn a little something for me and maybe I'll learn a little something from you you guys have any tips leave them down in the comment section Thanks alright guys see how this blood started come through go ahead and turn them how they're a nice golden brown it's gonna be delicious folks I hope you're enjoying me showing you this it's something I really enjoy I really love cooking in the kitchen I find it very therapeutic now when it comes to filming a cooking show we got to get a bigger kitchen for sure but I sure do you like sharing these recipes with you and sharing this stuff with you really makes me happy okay I'm gonna sprinkle just a little bit of salt and you can kind of salt it to taste we like a little bit of salt sprinkled on there just plain old salt you can pretty much tell when they're done when they're a nice golden brown just like this guy delicious now you want to plate with a napkin in it so that they will absorb any oils that drip off in there that's it kind of looking good you might want to know who taught me all this well I'm kind of pretty much self-taught my mom was a good old southern cook and I know what I like and I observed her when I was a kid and I don't think she thought I was paying any attention I was okay so while this is cooking let me tell you the thought process here the reason I set up a little workstation is to try and make this little a mess as possible oftentimes when you're battering and frying stuff it just makes your kitchen a terrible greasy dusty flowery mess and if you set it up right can you pay attention you can do a good job and not make a huge mess I'll finish these up and we'll show you how to make the gravy the trick here is guys you got to find just the right temperature you want it hot so it cooks fast but you don't want to burn it and you don't want it popping all over everywhere great thing about coconut oil is a little bit goes a long way especially when you're frying none of this matters at all the final product isn't delicious good what ha good so good kiss my diet good bye mmm if you've never made gravy there are only three ingredients the oil or stuff that's in the bottom of the pan from whatever you cook a little bit of self-rising flour and some milk let's show you how to make gravy all these goodies here in the pan are delicious all you need to do is take a little bit of flour that's probably a half a cup of flour we'll stir it into our oil really good okay it's all mixed into our all nicely then we'll take a little milk and we'll stir that milk in there I like to use a spatula because it has the holes in it and I can kind of mush it down in there we'll turn the heat all the way off now you see how thick that is we need to add more milk you can always add more milk but you can never add more flour if you add more flour it makes it lumpy and a mess right now it looks lumpy and it looks like a mess but it's gonna be delicious as it cools get thickens it turns into delicious brown grape put a little pepper and a little bit of salt that's your gravy now I realize that the gravy doesn't look super duper appetizing the way you're looking at it right now but once you put it on that biscuit mmm that's good right there so while we're waiting on the biscuits to cook let me tell you why I put corn starch in there corn starch if you've ever had like fried fish or been to a fish fry it makes the breading pop it basically makes the breading go from ham flat breading to it just it just makes the breading better I don't know what it is in there I don't know if the corn swells up kind of like I don't know kind of like pops but it swells up on the outside of the meat and it makes it a lot better it gives it that almost restaurant kind of feel kind of taste to it like it's bought in a restaurant it's delicious mmm so good hmm hmm here are mixed vegetables guys put a little bit of butter in here okay here's real butter make it strong make a border mmm or biscuits are out see how they're a little bit lighter colored on the top that's where that butter soaked in right there it's gonna make them delicious we'll serve biscuits over here in a little cooling rack and basically help ourselves here there are your good old biscuit on there go over here and scoop up some gravy be good eating right there so folks thanks a whole lot for joining me here on the Stoney Ridge farm I wanted to show you a delicious meal that I love to cook so I took you along with me thanks a lot click the like
