DAY 2: Appalachian Heritage Old Timey Hog Killing...Quartering and Salting Down day 2 of 3

What happens here

Young men are shown cutting up smaller pieces of meat and separating fat from lean for sausage. The presenter highlights the importance of passing down these traditional skills. Other parts like spare ribs and pig's feet are also prepared. The fat (lard) and skin are collected separately; the fat will be rendered down to make lard and 'cracklings' (fried pork rinds), which can be used in cooking or for flavoring. All processed meat, including the hams, bacon, jowls, and pig's feet, are gathered in the tractor's bucket for transport to the salt box.

Goal: Prepare trimmings for sausage and transport all cuts to the salt box.
