DAY 2: Appalachian Heritage Old Timey Hog Killing...Quartering and Salting Down day 2 of 3

What happens here

The hog, which is already scalded and cleaned, is suspended from the bucket of a tractor. Two people hold the hog's legs while a third uses a meat saw to remove the feet at the knee joints. The head is then removed by cutting at the neck. The removed parts are placed into a blue tub.

Goal: Separate the feet and head from the hog carcass.

Tools and materials

  • Blue Tub — To collect removed parts
  • Gloves — For hygiene and protection during meat handling
  • Meat Saw — To cut through bone and meat
  • Tractor with Front-End Loader — To suspend the hog during initial dismemberment
