DAY 2: Appalachian Heritage Old Timey Hog Killing...Quartering and Salting Down day 2 of 3

What happens here

After removing the feet and head, the hog is carefully lowered from the tractor and laid onto a homemade processing table. This table consists of plywood sheets resting on wooden pallets. A traditional 'single tree' tool, which is a wooden bar with two hooks, is used to lift the hog; the hooks are inserted into the Achilles tendons. Once on the table, the hog is rolled onto its back.

Goal: Transfer the hog to the processing table for further butchering.
