DAY 2: Appalachian Heritage Old Timey Hog Killing...Quartering and Salting Down day 2 of 3
What happens here
Bags of salt are unloaded from a truck and placed on a blue tarp near a wooden salt box located on the porch of a cabin. The salt box is made from 2x10 lumber and is designed to allow some air circulation. The bottom of the box is already covered with approximately one inch of salt. This setup is prepared for layering the hog cuts for curing.
Goal: Set up the curing station with salt and the custom-built salt box.
