Soup Season! How to make Delicious Smokey Beef Barley Vegetable Soup!
What happens here
While the beef is smoking, start preparing the stew base in a large pot on the stove. Pour in approximately 2 gallons of homemade tomato juice and begin stirring it with a wooden spoon. Next, add three containers' worth of beef stock or homemade beef bone broth to the pot. Meanwhile, gather and prepare the vegetables: dice the two onions (one red and one yellow/white), and cut the bite-sized potatoes (such as Tasteful Selections Sunburst Blend) into halves or quarters. Keep the potatoes and onions separate for now. In addition to these, measure out the other vegetables: 9 cups of cut carrots, 10 cups of lima beans, 6 cups of green beans, 6 cups of peas, and 6 cups of whole kernel corn. Also, measure 1.5 cups of barley. The seasonings needed are 3 teaspoons of minced garlic, 3 teaspoons of parsley, and 1 teaspoon of black pepper.
Goal: Assemble the liquid base and prepare all vegetable components for the stew.
