Homesteading Food Friday: It's simple, delicious and requires no fridge!
What happens here
Pour the newly milled tomato juice into a clean stockpot and place it on the stove over medium-high heat. Bring the juice to a boil and let it cook for another 10-15 minutes. As the juice boils, a layer of foam will likely form on the surface. Use a slotted spoon or skimmer to carefully remove this foam and discard it, as it can impart a bitter taste to the final product. Cook in batches that are manageable to handle when pouring into jars.
Goal: Boil the tomato juice, reducing it slightly and removing foam to improve flavor and consistency.
