Using a pair of pliers and an adjustable wrench, grip both the valve body and the compression nut. Turn the wrenches in opposite directions to loosen and unscrew the old shut-off valves from the copper pipes. Let the old valves and any remaining water fall into a bucket placed underneath.

Goal: Remove the existing shut-off valves from the copper pipes.
