Old Timey Traditional Appalachian Hog Killing

What happens here

Once the majority of the hair is removed, the hog's Achilles tendons are exposed at the hind legs. Use a sharp knife to carefully cut through the skin and tissue to isolate the tendons. Insert a gambrel (a wooden or metal bar with hooks) through these tendons. The gambrel will allow the hog to be hung for further processing. The video shows a 'single tree' gambrel made of wood.

Goal: Insert the gambrel into the hog's Achilles tendons for hanging.
