Old Timey Traditional Appalachian Hog Killing
What happens here
Once the hog has been sufficiently scalded (indicated by hair releasing easily), carefully lift it out of the tub and place it on the wooden pallets. Begin scraping off the hair using hog scrapers. These metal tools, resembling a bell with a dull edge, come in various sizes. Use the smaller size for intricate areas like behind the ears and the larger size for broader body sections. Work quickly while the hog is still warm and its pores are open. The hair should come off in large sheets.
Goal: Remove all hair from the hog's body.
