What happens here
With the knife resting on the flat surface, place the AccuSharp sharpener over the blade so that the V-notch engages the cutting edge. Apply only enough downward pressure to cut a tomato, as suggested by the demonstrator. For a knife that has never been sharpened with this particular tool, perform about seven to ten strokes, pulling the sharpener from the heel of the blade to the tip. This initial set of strokes will establish the consistent 21-degree angle on the blade.
Goal: For a knife that hasn't been sharpened with the AccuSharp before, apply 7 to 10 strokes with light pressure to establish the 21-degree edge.
